1 of 2 first cooks on a new Mini WSM

Went on a family camping trip in the Sierra Nevada Mtns. Wanted to share a couple of pictures of the first cooks on the Mini I built for our Niece's husband. The first night had Tacos on the menu, so I decided to make some Chili Verde. I used just the rub mix from this recipe on the Weber site. Mixed it with about 3-3 1/2 lbs. of Pork Stew meat in a disposable aluminum roasting pan. Used a 50/50 mix of Apple/Pecan (4 small chunks each).



It smoked for about 2 hours uncovered, then I added 2/3 (had to sample the rest) of a Negra Modelo beer, and a jar each of mild and medium La Victoria Chunky Salsa Verde sauce and a few dashes of Tabasco Chipotle Sauce. Then let it braise another 1 1/2-2 hours. The Mini held 225-250 the whole time.



Sorry, unfortunately I wasn't able to get any finished pictures because I was in the middle of some generator repair work when it came off and there were a bunch of hungry campers! It made for some great Tacos and Burritos though. Camp Cook #2 in next post.

This happens a lot. Pictures always seem like a great idea at the start of a cook, but toward the end, the hunger and smell of delicious food take over and the pictures are the last thing on people's mind. That's okay, that's a sign of a good cook.

BTW, cool lookin' mini!
 
Great menu idea and paint on your mini Doug. Call me crazy, but I think every mini should be on a table just because when they sit on the ground its a long way down there
and an even longer way back up.
 
Haha, I know what you mean Bob. That one was for our Nephew, I have mine built but still have to paint. Then I want to build a cart/stand for it.
