Cooking in bulk


 
800 - 1000 folks at the event , So far there's Two other vendors... Supposedly
... And you'll be the primary vendor... Doesn't anything sound funny to you yet? You'd think people would be more than willing to set up shop and sell there goods...I'd bet there's a good reason why the Organizer can't get more folks to sell food... Trouble waiting to happen and she's hoping you don't look into the legal side or turn your head and ask no questions.

This whole thing just doesn't sound right. The #s sound very small too ($$$). Sounds dangerous. Do you want to be this guy when the police come?

Dave recommended some very solid advice, but look at that first link I put in the post just a little while earlier - the food has to be cooked onsite or in an inspected (commercial or church) kitchen - our normal recommendations for like family weddings or parties etc aren't exactly valid/legal............but you don't even have a business license, insurance, your food handlers permit, and you're willing to sell beer out of a cooler, so what do you have to lose?



should've just told us it was for a family reunion :) Then we'd have all helped. We'd have still thought you were crazy but

.....can't fault a guy for trying, and for reaching out. I've had a few failures and still make more than my share of mistakes.

Paul, you seem to have set your cap, about doing this and “Damn the torpedoes, full speed ahead!” Is becoming your mantra. The venue expects 800-1000 visitors, even if you serve half the low end that’s still 400 sandwiches, plates, napkins, doses of sauce. You’ve done parties for 20-30 myriad times, there is a HUGE difference in 30 and 400, while I admire your pluck you simply have not got the experience to see what virtually everyone else is telling you(many of which HAVE the experience of larger number projects) is likely going to be a big headache.
Swimming in a pool is one thing I have thousands of hours in pools and the Great Lakes but, I’m not swimming the English Channel!
I encourage you to seriously reconsider this project, go do something for a boy scout camp or church group or something for 200 then try to do three of those in a week, you will be gaining some experience in small doses after you feed 600 in a week, just see if you think you’re up to a day with service for 400 sandwiches!
If you do follow this path, you have got to really consider security for staff, your area, as well as the cash box. Even the kindest venues can have unsavory lurkers watching for an opportunity!
I’m not saying buy a gun or anything but, a trailer with decent lock and at least one person always monitoring the box.
 
I know I deserve a good ole slapping for resurrecting this thread but I love this suggestion.

lol. Maybe a dozen slaps. We have a trucking company who picks up goods for one of our clients everyday and I asked if he'd be able to throw (I mean handle with kid gloves) a carton on for a personal account but they couldn't touch it without opening a corporate account.

Sorry but, Paul you have a lot of things to consider,very seriously. When you end up “In the Weeds!” It’s all of your own volition.if you have a hit, good for you, open the two day a week “pit service”, after the hobby glow has worn off at your sports bar venue wears off send us all the address.
 
Been waiting for two days for this to come back to life; got excited when I saw there was a new post, lol.
 
Paul, please have the good manners to share your decision either way of you don’t mind. You’ve asked for a LOT of help and consistently ignore it. But, if you succeed, we’d all share in the crow eating, I’ll do it on the 22” I’m trying to sell! Yes, self supporting commercialism but, I want to get something for my wife with thre sale proceeds!

Well? Have you gotten out of this or still planning on diving in headfirst?

I think he's probably embarrassed - I know I've invited friends & family here in conversations, links, etc.........he might have too!

No need to be embarrassed tho - his friend might be helping him set it up the right way......

Good to see him trying even if it's just thinking about it, and seeking advice. He's probably a damn good cook too if he has half the experience he claims, and probably a decent reputation since he got the unsolicited invitation.
 
I’ve been scouted out for things before in areas where I don’t have much experience before. Only took one on, not the best end result but, not total failure either. Just because one is asked does not mean they have appropriate skills for the task at hand.
Feeding a bunch of “almost” Deadheaders, could be fun but, planning is the hardest part. Two big weddings took me a month each to plan, provision, cook and serve. Then a day and a half to clean up and put everything back where it belonged.
I really hope he’s considering all the points that have been brought up before moving forward. With luck he’s connected with a couple of GOOD sidekicks to help with the whole thing.
No response in a week+? Hmmm.
 
The closest thing I've done is a handful of charity rides where I prepared BBQ and sides for the participants at the end of the ride. I didn't have to handle any money because we were giving the food away. I always cooked the butts a week or two ahead of time and froze the product in vac-sealed bags until the event. There is no way that I would try to prepare pulled pork at the event.
