Salmon with a crunch

Looking for a recipe to grill salmon or steelhead that would leave the meat with a slight crunch to it on the flesh side.

We love this one, usually do it on the grill indirect. Panko, pecan and parsley with a honey mustard binder.

Sand should work well.

Lee, Pat, thank you both. We'll give each of them a try. Bob, yes Nancy caught the steelhead in the Costco River.

I've heard the visa dry fly works well on that river.
