I've been browsing Ultimate Grilling and trying to decide which of Jamie's recipes to try first. I read in one of questions from forum members that Barbecued Chicken Adobo was one of his favorites. Decided to give it a shot.
Let the chicken thighs soak in the marinade for four hours.
Made some Spicy Black Beans and Yellow Rice. Just did the rice on the stove top. Softened onion, one huge jalapeno with seeds, crushed garlic and a bay leaf.
Threw in a couple of cups of soaked black beans.
Out of marinade.
A little over an hour and a half. Beans done.
Made a batch of sourdough biscuits too. Use 200 g's of my starter on these.
Got the chicken going over some high heat.
Finished it up on the cooler side until I had an IT of 165.
Plated.
This chicken was delicious. Jamie's recipe for the basting sauce used in this cook is amazing. Wonderful flavors. A home run for sure. Hope you're all having a good week. Thanks for looking.
