Cliff did a thread on “Best Ever Smothered Wet Burritos” With a “Mexican Street Corn Salsa” Barb and I both thought it was great so we decided to make it for Cinco de Mayo.
Although I made a few changes, The original recipe called for a can of no bean Chile and a can of enchilada sauce and a can of refried beans. Being on a salt restricted diet usually canned anything is a salt bomb. So I made homemade no bean Chile, enchilada sauce and refried beans all very low in sodium. Barb made the Street Corn Salsa and a guacamole dip.
We had to use the gasser for the cook as we had ferocious winds with gusts of 45mph.
I have to say this was really good and will definitely do it again.
