low temps of 250 to 275º... this is gonna take at least two hours so the Yukons joined in

after another 70 minutes, i sauced the steaks quite heavily with Weber BBQ sauce "Kick'nSpicy"

I was finally going to try PS tonight, but my plans fell through. And now this! Pure torture!! Your plate looks absolutely fabulous. The pork, of course, is perfect. And I'm sure the Yukons and gus were too. Yum!!!
