Currently cooking 1 rack of baby backs. I set the stoker to a target temp of 275, however the fan will not turn on once the temp drops below the target temp. I have tried turning on/off the stoker numerous times. What advice can you guys offer me?

First time using clay saucer, when I unwrapped the clay saucer after a 5 hour cook the saucer has started to melt, and lose its shape. Is this normal? Looks like 1 more use and it will be completely destroyed. Is there any suggestions?
