    Canada Day Boston Butt

    Rosemary and Orange smoked chicken...

    Hi all, Thanks- yes, the chicken was marinated in a brine which included crushed rosemary and orange juice, then smoked on my WSM for 2 hours. The recipe was in gary Wiviott's book "Low and Slow". Bill

    Supper tonight

    Hi Jon- Basically a bourbon and honey brine that the chicken sat in overnight in the fridge, then smoked on my WSM for a couple of hours. Very tasty I must say. The basic instructions and recipe are in Gary Wiviott's book "Low and Slow", which if you have a WSM is a must read. Bill

    Pulled Pork for Kentucky Derby dinner

    Had a few folks over for a Kentucky Derby watch and dinner - so I decided to do a pulled pork meal. Put the butt on at 4 a.m. and by 4 p.m. it was done nicely. Both the race and the meal were highly satisfactory ! Photos at: http://www.billcurry.ca/pork

    Hi Gary- Rub was as in Gary Wiviott's excellent book - Low and Slow. I also used a Tart Wash, which is a little of the rub and Cranberry Juice and Olive Oil for the last 20-30 minutes or so... Bill

    Canadian Thanksgiving
