    How long before cooking do you rub ribs?

    I fire up the chimney then come in and rub the ribs. When the fire is ready the ribs go on, so it's probably an hour before they go on the smoker. Steve

    Favorite WSM item to smoke

    Brats and kilbasa make good appetizers while the ribs / brisket / butts are cooking. They only take about 1 hour, just slice them up and watch them disappear. Dennis S. - I may have to try the Jimmy Dean sausage soon.

    Just for other S. Jerseyites info, the BJ's in Mays Landing always has the 2-Butt CryoPacs when I'm there.
