    Rusted side brackets

I just noticed that one of the side brackets on my 18" WSM (the brackets that hold the water pan and lower rack) is badly rusted, and won't hold the weight of the water pan any longer. It just bends under the weight. At the moment I've got it just hanging on for tonight's cook, but I wonder if...

    Shredded BBQ Beef

I just used the new Shredded BBQ Beef recipe from the site, and have to say, it was fantastic. I used Goya Adobo and McCormick Montreal Steak Seasoning for my dry rub. Mesquite and Cherry for smoke wood. My family is already asking when we can make it again. Five stars - and EASY clean up. -Jeff

    Burned out overnight

I'm cooking 6 butts for a church dinner. Started with an overflowing pile of Kingsford about 9:00 last night (Minion). At bedtime all seemed to be going well - having a hard time maintaining 225, but hovering around there. This morning at 8:00 I woke to discover that all of the charcoal was...

    Starting Temp for Butt?

Tonight I'll be smoking six pork butts for a church fundraiser. Does anyone have any advice on whether to: a) let the meat sit for an hour or so before putting it in the smoker, to take the chill off from the refrigerator, or b) keep it as cold as possible before putting it in the smoker...

    Keeping the heat down

The last two times I've used my Stoker I've had a hard time keeping the heat down. For instance, on my most recent cook I was doing two boneless pork butts. I started Minion method, and the WSM slowly came up to my target temp of 225. The fan kicked off, and about twenty minutes later I kicked...

    Grill Light

Now that it's getting dark so early, I'm looking for a good grill light for my Silver B. Any suggestions? -Jeff

    Remote access to Stoker

I'm just enough of a techie that I'd like to be able to access my stoker from my office computer while it's cooking away at home. I'm not quite techie enough to figure out how to do it. My stoker is connected to my home network via an Ethernet cable between the stoker and router. I'm running...

    Woo hoo Costco

Woo hoo! Costco is once again carrying my favorite commercial BBQ sauce - Organicville "Tangy". Sweetened with Agave rather than sugar. Really great!

    Stoker instructional video

Hey folks, I'm new to the Stoker. Unfortunately mine had a few "issues" when it arrived, and I'm awaiting a repaired box and replacement probe. But on the first try, I had a real hard time trying to figure my way through the manual. I'm wondering if anyone here has done a video of a typical...

    Best BBQ Books

One of the favorite books in my library is "Peace, Love, and Barbecue." I'd like to read a few more great BBQ books. What I'm looking for is technique and pictures. I'm more concerned about how to smoke than recipes for sauce. Do you have a favorite? And, why? -Jeff

    Where to buy bone-in Butt

I've looked around central NJ for bone-in pork butt, but every store in the area seems to sell only boneless. Anyone know which store I may have missed?

Stoker under the tree - sort of

Merry Christmas to me. I opened a VERY light box from my wife, and it contained a coupon for a Stoker. Seems they were all out, but gave her an anticipated ship date of January 17. Mmmmmmm. More good cookin' coming my way.

    Best Temp. Probe

Hi, I'm making up my Christmas list, and I'm thinking BBQ. In particular, I'm thinking about an automatic temperature controller for my WSM. I know that there are a couple out there. Which one do you recommend, and why? Thanks, Jeff

    Bobby Flay

I just saw an episode of "Throwdown" with Bobby Flay. He was facing off against a champion cook making St. Louis ribs. Well, the big surprise was that the champ grilled his ribs for 20 minutes on each side in his pit, and that was it. Bobby, meanwhile, smoked his for hours (as most of us do)...

    Regulating temp for direct grilling

I'm thinking of buying a charcoal grill, and I've always avoided buying Weber Kettles. While they look great for indirect grilling, I just can't figure how you regulate the heat for direct grilling of things like steak, burgers, etc. I'm used to raising and lowering the grate depending on...

    Weber Gas or...

I've got a Silver B that I've been using at home, but now I plan to put it into service at a vacation rental property that we own. This means it's time to buy a new gas grill for home use! I know Weber is a quality product, and I like my Silver B, but it's missing some features I'd like to...

    Espresso machine

About 12 years ago we bought a Capresso 2000, Super-automatic espresso machine and steamer. It grinds, tamps, and brews the coffee, and makes lots of steam for the milk. Our single most used kitchen gadget. But, every few years it has needed to go back to the factory for various repairs. Last...

    Vita-Mix

About a month ago I finally broke down and bought a Vita-Mix blender. I was almost ashamed of myself, considering how expensive they are. But after seeing the demonstration I figured, sure, give it a try. Well, after a month of use, I'd say it's the best kitchen gadget I've ever owned that's...

    Cutting down firewood

I just took delivery of a cord of firewood. The tree guy helped me pick out a few nice cherry logs which I'd like to cut into chunks. Does anyone see any problem with this? I'm going to use a hatchet to split and a circular saw to cut. I wish I had a better knowledge of wood, 'cause that...

    New York/New Jersey BBQ Restaurants

I love cooking my own BBQ, but sometimes I'd like to let someone else do the cookin'. We live in central New Jersey. The only BBQ I've found around here (other than South American places that are really grilling, not smoking) is Famous Daves. But who wants to eat at a mass market chain? Where...
