St. Louis Folks-Where are you getting your Meat?

    Charcoal vs Gas

Hi Kevin, I have up until now only owned charcoal Weber grills. If you had to choose one, and only one Weber to use, which would you pick, and why? Thanks, Joe

    Tri Tip withdrawals

Costco in most areas of the country stopped selling tri-tips a couple years ago. Cooked a 2.5 lb from TJs last evening. $6.99/lb, but I'm not a huge fan of the quality of meat from TJs. It was not as tender as I like. But much cheaper to buy and easy to find.

    Tri Tip withdrawals

I have stopped in Trueths within the past 6 months and they told me that they do not carry tri tips anymore b/c at times they would have have to grind the meat when the orders were not picked up?!?! I was disappointed to say the least. I will have to check again. Also have called some local...

    Wood chunks in Maryland

Thanks for the responses, I had no idea HD sold wood other than mesquite or hickory. I tried Watson's, and the price was almost $3 more than HD shows on their website, but it also says they don't carry the wood chunks at any local stores. I will have to explore some I guess.

    Wood chunks in Maryland

Bumping an old thread in case someone nearby knows of a good local source of wood chunks for purchase. I'd much rather not pay the shipping but I will if I have to. Please help me save some money with your knowledge.

    Brinkman Charcoal Pan

Just ordered myself one, and still only $4.99 with $5.00 shipping. Seems the movers lost my water pan, so I have no choice but to get a new one. Think I'll claim the 18.5 WSM is no longer functional and charge them for a new 22 WSM

Where to buy brisket and butt in Saint Louis

Dan, I would recommend Costco for butts, but also watch the prices at Schnucks, b/c when they have sales, they are cheap. I don't like the briskets from my Costco much, b/c they are very thin and small and they do not sell whole briskets. As T Ring said, Baumann's Fine Meat in Brentwood is...

    anyone else bbq'ing tonight?

Tough to get up this morn since the boy woke up screaming at 3.30am. When I woke at 6:15 and the WSM temp was 211 F, I didn't care, but at 8:15 temp was down to 189 F, so I added coals, water, opened access door and vents. Butt temp around 160. I'm refreshed, it looks great and I wish I could...

    Limoncello (Lemoncello) the Italian way

The minute I saw this post I knew what I had to do. It took me a couple of weeks to get started, and I can not wait. I love this place. So much more than just a WSM website. So much knowledge. Now the pic for the day I started it.

    anyone else bbq'ing tonight?

Been too darn long since I last used the WSM. Picked up this 9.8 lb butt, using mustard and rub recipe in cooking topics. Now four hours in and meat temp is 139 F.

    pulled turkey question

So I bought a natural petite turkey from Whole Foods, brined it 8 hours in basic brine, now it is sitting in fridge air-drying. I want to cook it tonight and can not decide if I should go low(er) and slow(er) or high and fast(er). 235 degrees versus 350 degrees. I want to serve some pulled...
