    Fuel consumption increased today....

Did three - 9lb pork butts today on an 18.5" WSM for my brother's 40th birthday next Friday night. It was 32 degrees and a tad windy with a frost on the ground at 6 am when I started. I filled the ring completely with charcoal, a decent amount of hickory chunks and did my normal thing at 250...

Freezing pork butt to use this weekend...

I've done a lot of reading on this so far and there are several different theories. I'm usually a smoke and eat it type of guy but I'm smoking two 10lb pork butts as we speak to be frozen and eaten at our annual dove hunt this weekend. This will be a first for me. I want to freeze it...

Pork butt shoulder digital thermometer question

This will be my first multiple pork butt BBQ on the 18.5" WSM. Not sure if I can get them both on the top rack and probably will have to go top and bottom. Both are 10lbs each. My question is I have an ET732 digi thermo and that means one probe for the meat and one for the heat. Which...

Spare rib bones....or lack there of.

Is it just me or are spare ribs lacking more bones all the way through these days? I just don't remember spares having 1.5" to 2" bones over the last half of the rack down to nothing. Even if I trimmed them St.Louis style they would be half racks with a lot of throw away...

Lid temps versus top grate temps

What kind of temps differences should I expect if any between these two areas?...This is my 4th smoke on the WSM and second using a digital thermo like the ET732. My ET732 probe is mounted on the grate directly below the Weber lid thermo. Both have been boiling water tested and were accurate...

    2nd brisket on the 18.5" WSM....live smoke..

11 pounds of flexible goodness trimmed down from 12.6 lbs. My first one on the WSM was 7 lbs and turned out really good so I decided to step up the size after ribs last weekend.....although this a about max for the 18.5". I'm not used to limiting size coming from an offset but I am liking the...

Finally got my new 18.5" WSM mods installed....

After reading here and a few other places until I reached OCD overload mode, I finally decided on a several mods I wanted to do. I still have not made the 25 mile trek to Academy and looked at the Brinkmann charcoal pan but I'm going to do another larger brisket this weekend and see if it will...

Storing ET732 or other similar digital thermometers question?

Simply put.....How do you store yours? I fully expected to find a soft case or something by Maverick or somebody to put the two units and the probes in when not in use. Besides the universal carry-all, the Crown Royal purple bag , how do you store yours and is there a case I am not finding...

    Cooler WSM constant temp issues

Can't seem to get my WSM to stay above 210-212 with the bottom vents closed using the minion method. I can crack is just a quarter on one vent and it'll shoot up to 250. This reading is on a stick thermometer (some call it a candy cane I think) that is stuck in the top vent. My Weber...

    Burning partial briquettes question

Like many here, I have leftover briquettes that did not completely burn in the bottom of my WSM during my first smoke. I put all the 1/2 burned and solid pieces in my chimney for lighting tomorrow and have new charcoal outside the ring per the Minion method. The chimney is just under 3/4...
