Lid Hinge for the WSM in action

Today's cook is two nice pork butts smoked over apple wood. This is only the second cook since installing the new lid hinge and so far I love it. It is so much easier than having to sit the dome on the ground every time. The only drawback, albeit a very minor one, is that you have to use 2...

Quick smoke tonight on the WSM

Picked up some nice-looking chicken thighs at Sam's yesterday. After deboning and trimming them I marinated them overnight in a raspberry vinaigrette dressing. Before cooking them I rinsed and dried them off, then seasoned the meat side and filled them with cream cheese and roasted jalapenos...

Need suggestions for boneless, skinless chicken breasts!!!

I am a beef/pork guy for the most part, but...........today I ran across a deal I couldn't pass up. The local grocery store near my house had the biggest chicken breasts I've ever seen. They were so big I thought they were turkey breasts at first. They are boneless and skinless which isn't my...

    First MOD complete!

Finally got the nerve to drill holes in the WSM and got the new lid hinge installed. Very well made and it works like a champ! I think the CB door will be next.

First mod on the new WSM!

Today was a much-anticipated day and I was delighted to say the least when the postman showed up with the brand new lid hinge I ordered. I opened the package like a kid opening his first gift from Santa on Christmas morning. I must say the quality and craftsmanship is top notch on this thing...

    Igloo Party Bar ROCKS!!!

My wife bought me one of these to add to my outdoor grilling/smoking area and it is the bomb! I know it's not a gadget directly related to cooking, but..........what is outdoor cooking without ice-cold beer? An absolute must-have patio cooler and it is HUGE!!! :cool...

    Love that SMELL!!!

So far I have found many things to love about my new WSM. But the other day I noticed something that made it just that much more special. Like most folks who live in the burbs, we enter our house through the garage rather than the front door. And man, does the garage smell good! My old...

Boston Butt on the WSM 22.5

Came out juicy as all get-out AND packed with flavor!!! This was a fairly small butt and I did a fine shred on it for sandwiches, (my wife's favorite). There is nothing at all added to this as far as sauce or anything, it really was as juicy as it looks in the pic. I did wrap it in foil for...

    Dumbest question EVER!!!

I sure hate it that my first post here has to be such a dumb one, and I beg for mercy right up front. And if this is posted in the wrong place, again..........I beg for your forgiveness. I am not stupid and I am pretty good at fixing and repairing most things, but..........I have tried and...

Greetings from the Lone Star State

Hello, my name is Mike and I am a smoke-aholic...........let me tell you a little about myself. I am in my mid-50's and have been on the business end of an offset smoker since I left home nearly 40 years ago. I have owned and/or cooked on just about every brand of offset smoker there is, from...
