    Horrible Smithfield ribs from Walmart--beware!!

Our local HEB in Brenham routinely has unjuiced pork from IBP and Smithfield plus of course the usual things labeled "marinated." Walmart and Brookshire have only juiced/enhanced pork that's always labeled "enhanced with % solution" and it's salty/hammy and otherwise nasty. You have to...

    Bone suckin' sauce

This is close to it... 1 cup ketchup 1 cup water (more or less for consistency) 2 Tablespoons apple cider vinegar 1/4 teaspoon onion powder 1/4 teaspoon garlic powder 1/4 teaspoon crushed red pepper (more or less to taste) 2 teaspoons dry mustard 2 Tablespoons light brown sugar 2 Tablespoons...

    One more sacrilegious post

My Dad used to soak briquettes in kerosene in a small bucket for hours, then light the bucket. After the conflagration died down he'd pour them into the Hibachi and incinerate the steaks. That sort of smell sure brings back good memories. A few years later I was a "Be Prepared" Boy Scout who...

Any La Caja China owners out there??

I had a La Caja China #2 for several years; had to let it go when moving cross-country in the RV. I've also extensively used an offset pit, a Large BGE, a WSM and Weber Kettles. The La Caja China turned out to be great for things that would otherwise require a huge rather expensive pit; I...

    Charcoal Grates

I warped the charcoal grate in my brand-new Performer first time out. Not the first or last time. <g> I doubled the grates at 90-degree angles so little pieces of charcoal don't fall out so easily; both grates are now warped but aren't getting any worse.

    Things you hate about BBQ....

"Hate" is too strong a word...maybe "intensely dislike." I intensely dislike being suckered into going to a "prize winning" BBQ restaurant and the Q ranges from utter crap to nondescript. Big chains or hole-in-the-wall places, it happens all too often. It's gotten to the point that we'd...

    STOK Cast Iron Grate Review

I have the Stok grate and it's performing as expected. Cast iron is fairly brittle, so damage in shipping is certainly a possibility. I have a cast iron bench broken from a drunk leaning on it. <g>

How to get more smoke into a thick Port butt?

It's been said that if you're exposed a lot to the smoke, say on a long smoke, you probably won't taste/smell the smoke on the meat anytime soon. Might be a myth, maybe not. I've found that when I do a long cook on the Bullet or BGE and taste the meat the same day I taste pretty much no...
