Redhead Performer on CL $30!! STL

It was a beautiful weekend here is MO so I spent my Saturday cleaning up the new RED SSP, aside from a couple of rust spots the grill is in fantastic shape. I installed an upgraded ash assembly and one touch cleaning system. Yesterday I decided I would make some pork steaks, sweet potatoes, and...

Redhead Performer on CL $30!! STL

Today was a good day! Got a new red performer for $30 on CL this morning in St. Louis. After a few years of hunting and very little success today finally prevailed. The grill is in decent shape, needs a new ash catcher and good scrubbing with some dawn and a scratch pad. Should be like new...

    WSM 14.5" vs. 18.5"?

There are only 2 in my household, the fiancé and I. I built a mini about 3 months ago and it's been used at least once a week since I built it. It's the same size at the 14.5" wsm and makes plenty of food for the 2 of us. But I've also been able to smoke 2 chickens at once, a 15lb turkey, and 4...

    Sauce.

Blues hog is made right here in Missouri so it is readily available for us. I know you can buy large quantities.. Even a gallon at a time online for around $39 I've seen on amazon. It's worth it if you like blues hog. I've heard of some BBQ teams using blues hog with a little honey and winning...

    Sauce.

Making sauce isn't very hard but it's all about personal preference. I always been in love with blues hog but it's just so expensive. So I started cutting it with sweet baby rays. The butter seems to add a little shine to the meat and the honey helps with the sweetness. Honestly I don't know if...

    Sauce.

I have had numerous friends and family rave over "my" bbq sauce. And they're shocked when I tell them what's in it.... Simmer some blues hog cut with sweet baby rays. A little sugar, butter, and beer. It That's it. What does everyone else use in their sauce??

    Big Bird on the Mini.

I can't remember how thick the steel is but I bought a single sheet from Home Depot for roughly $9.00 and the steel spool was only $1.50. We big Americans love our bulk purchasing. http://t.homedepot.com/p/Crown-Bolt-24-in-x-1-2-in-x-12-in-Plain-Metal-Expanded-Sheet-45830/202183496/

    Big Bird on the Mini.

And just a side note. I had that many coals left after smoking for 2 hours at 250 degrees. These mini's are very fuel efficient.

    Big Bird on the Mini.

[/IMG] [/IMG] It may be hard to see in the picture because I have some coals left in the basket but it really helps with air flow and the coals burn more evenly because they are packed in there together pretty well. You will only need one sheet of expanded metal. I traced the...

    Big Bird on the Mini.

I made a charcoal basket out of expanded metal and some stainless ties. It was easy to do and it keep the air flowing around the coals much better. Before I added the mod my mini would get up to 270 tops. After I used the basket for the first time I wanted to see how hot I could get the mini up...

    Just ordered one of these.

My smokey joe table came today and I'm pretty happy with the way it looks so far. I haven't been able to give it the full test run yet. [/IMG]

    Air Vent Tube

I fabricated a charcoal basket out of expanded steel and that made it way better for me. I also have a Sj gold so air flow was an issue but not anymore. They are simple to make.

    Pork shoulder on the mini.

I used quite a bit of rub. A nice coat of yellow mustard. Then the last 4 hours or so this morning I mixed cayenne pepper and vinegar and coated the meat every 1/2 hour. The mini burned the coals pretty slowly since I only needed about 250 degree cooking temp. I also have a charcoal basket that...

    Pork shoulder on the mini.

The pit temp was just over 100 and I didn't take an internal meat temp. I suppose I'll jus keep cooking until I get to 195.

    Pork shoulder on the mini.

I slept a little too long and my fire almost went completely out.. So I got everything going again this morning but I'm worried that I may have ruined it and also extended my cook time.
