    13qt Winco bowl for the 18", but it is a little deep and can affect amount of charcoal. For 22" I think Vollrath 20qt is what we use. Running 3x 22" 6 days a week and those bowls have held up for 2.5 years.

    For me spraying ribs only slows down the cook by 1. Losing heat by opening the lid and 2. Adding water to the outside of the ribs which must then be heated and cooked off.     Three things I have found to improve skin, which is very similar to what you mention. Drying via refrigerator overnight, salting to pull out moisture, and use a jaccard instead of a knife to pierce the skin.

    Couple of questions

    Charcoal is not considered a dangerous good by air which are the regulations for the airlines. Every airline should have a list on their website of what you can not bring. But I am with Bob, I wouldn't lug around charcoal.

    I'd reheat the pork before anything else and wouldn't waste beef ribs to be reheated. What about butts and brisket on the 18", ribs on kettle and chicken on the 18" once the butts and brisket finish up ? You said no high heat but it makes things like this much easier.

    If your confident in your low and slow times on the brisket and butts then go with it. Beef ribs low could take 7 hours if they are thick. Instead I would smoke until a nice color at three hours then foil till tender. Chicken on the kettle.

    Bob, in my experience 160° won't be done for your hams & shoulders on a whole hog. Although this is different from cooking butts for pulled pork you still need to get the hams and shoulders tender, and at 160° they won't be.
