I use the 18WSM and can get on average 10hrs out of an almost full ring of Kingsford Blue charcoal for pork butts (bowl in, no water). Target temp of 240F at the dome thermometer, bottom vents at about 25% open, top always 100% open. But I use "Soo's Donut" load of lit charcoal in the center...

I used to wrap, but am a no wrap convert for ribs and do full rides. I also go St Louis over b-backs, but that's just me. 2 full racks for a family of 4, with all the side dishes makes a perfect meal. 18WSM, target temp of 240-250F on the dome thermometer. 4hours-ish with some plain water...

Maybe try a combo of indirect/direct; start indirect to get close to desired doneness, then remove the bowl and go direct to finish and crisp the fat?

Think of the smoked brisket, ribs, pork shoulder using the dried barrel staves after savoring the last pour! :) Might take awhile....maybe not. :LOL:

Just got back from Lowes in Poway (San Diego) as I was in the market for a new Weber Spirit S315 to replace my worn out Vermont Castings propane grill. They have the Spirit S-315 on clearance sale - marked down from $699 to $345! Assembly and delivery was free. Get 'em while you can.

If I were using a premixed available rub I'd use Bad Byron's Butt Rub Honey mustard slather as a binder, then dust liberally with the dry rub and good to go. I've moved on to my own dry rub concoction, but this is a great fall back, imo.
