Use some apple juice and a little balsamic vinegar. Maybe a little cayenne pepper to add some heat. Then add some honey if you want to give it some tang.
I purchased one and recommend something else. The motor sounds like its in and bind and the blade doesn't turn fast enough. I sent mine back for a refund. Or course I may have purchased a bad bird out of the flock but i would suggest that you buy another model slicer.
I use the jimmy dean regular sausage then rub it with a cajun style pork rub. This makes the "hot" sausage to hot for some people. For the first time cooking fatties I would suggest you use the regular and then add the heat yourself. This will give you more control of how much heat you want...

I will cook my boss a couple of boston butts when I cook some for myself. He just pays for the meat I cooked for him. It is no extra cost for me except for the rub and injection. Maybe worth that to score a few brownie points.
I never use the bottom vents to control temperature on the kettle. I keep the bottom vents open 100% and use the top vent to adjust the temperature. I find that adjustments to the top vent make the temperature change quickly so you do have to watch it more closely than the wsm.
Watch this vid and maybe it will give you some ideas about how you want to cook your turkey. I used this recipe last Thanksgiving and the turkey was delicious. Very easy to do also. Good luck!
