What do you wish you knew for your first smoke?

Remember it is suppose to be fun, don't make it harder than it has to be. We are not building rockets, everything doesn't have to be that precise. If you don't have an ingredient for a rub, marinade, sauce or whatever don't worry, use a substitute or go without. You don't have to be at 225 or...

Looking for some good Rotissere ideas.

Top round roast or similar heavily seasoned, cook to rare/med rare. Let is set overnight if you can wait that long and slice it thin for roast beef sandwiches. Do the same with a boneless ham or turkey. Get you a grill basket and you can grill spatchcocked chickens and cornish game hens.

    Nashville Hot Chicken

No they are not boneless. The chicken is traditionally served on white bread with pickle chips on the side

    Nashville Hot Chicken

Instead of frying the chicken I dredged them in some Dixie Fry Coating mix and then cooked them indirect on my grill. I used Hauttie B's recipe for the sauce. Never had hot chicken before except for the stuff KFC sold, really liked this. Also instead of white bread I used Honey Oat bread.

    Tri Tip

Cooked one of my favorite things tri tip. I've cooked better but this was still pretty good. Simply seasoned with Montreal Steak seasoning and served with some sauteed asparagus cooked on my Ballistic griddle and some blue box mac and cheese

Shrimp Ceviche and Baja Style Shrimp Coctail

If you cook it in just lime juice you need to let it set. I used to make it that way, now I just boil the shrimp.

Shrimp Ceviche and Baja Style Shrimp Coctail

Not a single coal or a grill in sight for this meal, just I thought I would share this meal if some of you are looking for something light and refreshing since we are in the hot summer months of the year. I does go great with grilled fish tacos and a cold beer or Michelada is almost required to...

    WSM or Kettle

I own the following and use them as such. I use my Performer more than all the others combined. I would say I use the 18" WSM next but a close second would be my 26 Kettle. Last would be my 14.5 WSM. I have only had if for a couple of months so things could change on the amount of use in the...

First go at ribs on my Performer

Very nice!!! I like to do ribs on the smoker but was a little pressed for time so I did a rack of spares and a rack of BB's on the grill Friday night and we had a couple over that night and both of them said they were the best ribs they ever had. I can't recall anybody ever saying that to me let...
