    I have cut a small slot in the middle cooking section top rim - just wide enough to lay the probe wire in and place the lid on the cooker without crimping the wire. Works great.

    I had a bad mold problem. Took the grill grates and water pan to car wash. Used the high pressure hose. Worked great. Then I did a burn out. Then took a scrapper to the inside walls of the mid-section and charcoal bowl. It's now ready to cook. Shined up the exterior too.

    I've also heard that taking a damp cloth to the outside of the WSM just after a cook, while the sides are still very hot (be careful) is a bit like steam cleaning it. I'll have to try that. Many thanks, Joe!!
