Wild Boar Cooking Suggestions?

We had some last year. It was good, but as you said, much leaner than comercial pork. I brined mine (can't remember what recipe). The brine seemed to really help.

Smoking my first pork chops - newbie questions

Hey Dave, welcome to the forum! I would listen to Mark. I have never done chops on the WSM. I can however make it to Mishawaka in about 45 minutes or so if samples are available!!! Good luck. Oh, and I would recommend leaving the pan dry with foil in it for easy clean up.

    a little intimidated

Cook until PROBE TENDER! You may have a feeling that you are over cooking the brisket. It is not done until a probe goes through with very little resistance (if you are using a thermapen, it is quite sharp and therefore hard to get a good feel with). I use an old...

    Reheating and Food Saver Question.

I have read that freezing pulled pork in Food Saver bags and boiling it to reheat is the way to go. We are going to cook a little over 200 pounds, so I will have to cook in batches and then reheat later. What bags work the best and is boiling the way to go?

How Many Pounds Can You Get on a 22?

Well, we are preparing for our son's graduation open house and pork butts are the star of the party. I know this question has been asked before, but there are some new folks here so I thought I would bring it up again. How many butts have you guys crammed into your WSM? I have a 22, but any...

    My New WSM Bling!

Shiny! Is that a beagle I see walking away in that first pic?

How much fuel am I wasting? Not as much as you think!

You must be retired, hey John? Just kidding bro. I agree that once any heat sink is hot, that it will take little fuel to sustain it. It probably makes it even more efficient. I just don't like the clean up as I am very lazy. I have considered foiling a clay saucer, but so far my WSM is...

    A couple initial cook questions...

I would suggest not using water in the pan. Just foil and leave it dry for easy clean up (Chris has some awesome videos posted that help with foiling). I always load my WSM full of charcoal and when I am done, I just shut all the vents and choke the fire out and use any remaining charcoal on the...

    Cooking in the rain

Cooking in heavy rain is the only time I have had problems keeping the temps up in the WSM. I have cooked in some pretty cold temps this winter and over night cooks in the cold. Rain is the one thing that I feel is a killer. Gotta have the roof!

    Weber Chimney

Yes, I have used two before, but they are only 6" in diameter and 7" tall to the grate. A fully loaded Weber model will probably be perfect. Huh, it's almost like it's designed that way!

    Message to the lurkers... *****

I also lurked for two years before joining. This is the first website that I have joined, so maybe that played into my apprehension. Folks who blog and such may just jump in, I don't, except here. Come on in people, the water is fine! And another thing, don't be...

    Weber Chimney

Could someone give me an idea of the rough dimensions of the Weber charcoal chimney please? I have two off brands that are not long for this world and everyone here seems to love them. The pictures I have seen make them look bigger than the ones I have. Also, do you recommend getting two, or is...

    ARRGGH Boston butt plateau

I have found that foiling can sometimes help get through the plateau. Of course this is of no use to you now judging by when you posted. Hope it came out ok!

    Well, I did it again!

Sorry fellas, I have been busy again and haven't been checking. Our twice baked potatoes look similar to the ones posted above, but we put a LOT of cheese on em! Some in the middle and some on top. I wonder why I'm fat...

    height modification

Hey Dave, I saw a mod where someone used conduit to make new legs and raised the grill. I have been searching but I can't find it. If I come across it, I will post it here. If you raise it, the legs will stick out past the grill unless you bend them. Should be a faily easy task. Welcome to the...

    How much Charcoal Per Hour?

Plus, if you take your time and pack the charcoal in the ring, you will have much more fuel than if you just dump it in. I just learned that little beauty. Don't know why I wasn't smart enough to figure it out on my own.
