    Sugar maple wood?

I love it and mix it with other woods. It is however the only wood I use for smoking salmon. My salmon is a very easy brine but it gets the best reviews since switching to sugar maple exclusively, Ken

MEMORIAL DAY BARBECUE - DISCUSSION / ADVICE

I guess I have been extremely lucky with my butts so far then. I get them at Costco, all around 7pounds. 225 degrees on built in lid thermometer on wsm18 and 1.5hrs per pound (foiling at 170ish) has been about right pulling at 200degrees, Ken

    Serious question...

My father in law lives in South Carolina. He came up to Michigan and after one smoke on my wsm he ran out an ordered one. I lean towards the sweeter style and always have. I went to a famous Q joint in S.C. and couldn't even eat the vinegar based pulled pork. My mom always used sweet sauces so I...

    Red vs White Oak

Adam, I used red oak exclusively because that is what the local stores by me sold. I used it primarily for beef. My buddy cut down a white oak and I haven't used red oak since. I'm not sure I can explain it but the white oak to me has a better flavor. Of course that is for my taste anyway. I...

The Napoleon 'Bullet': Apollo 3 in 1 Smoker

$299 by me. I laid the grate to the 18.5 wsm on top and it is about the same size. IMHO its a 18wsm with a few extras, access doors are tiny so are the probe holes as well. I think I'm just buying another 18wsm, Ken

MEMORIAL DAY BARBECUE - DISCUSSION / ADVICE

9p.m. the night before is too late? Is this because he is doing three butts? He said he had two wsm's I was thinking he was doing the ribs on the other. Sorry to jump in but I'm planning 3 butts for a block party and was still only planning around 12hrs for 6 to 7lbers. Should I plan more time...

    First cook for a crowd

Thanks for the quick replies. I have 3 more questions, what is the best way to reheat the pork? I have a large electric roaster with a lid. Also how much time and what temp should I reheat? What cut of beef do you use for the pulled beef? Thanks, Ken

    First cook for a crowd

Hey everyone, been cooking on the wsm 18 for about a year. So far it's been just for my family. I'm volunteering my services for my block party this year. I'm thinking briskits and butts. I was wondering how much uncooked meat do you guys plan for each adult and each child? Also how much can I...

My 1st Turkey Breast/1st smoke on WSM

All I can say is WOW, I had a older, cheaper charcoal smoker, a gas one and an electric one as well. I did my first Turkey breast ever on my new WSM. I was nervous about not brining so I only did a three pounder to start. Couldn't get my lid temp any lower then 250 degrees but man oh man is...
