that is sort of the direction I was heading, but just wasn't sure how they would hold up in a cooler for the drive. Sure don't want them to be mushy. He has a brand spanking new gasser that I can re-heat on.
Got a question for all that are in the know.
I am going to be attending a family BBQ this weekend and don't want to haul my WSM all the way up north to do the ribs. I would like to start them here in the morning and finish them once I get to the "Q". Does anyone have any suggestions? the "Q" is...
Please excuse my ignorance fellas, but I know nothing about briskets even though I have cooked them before. What is the "point" that you are always referring to?
Hey Larry, just adding my .02 worth, but if you are planning on letting her rest for 45 minutes, I might want to pull her at 120-125. I think you'll be golden at that temp, but hell you know all this, your last one was a thing of beauty.
Dang Sean, it sounds like you may have an air leak if she got that hot. With the lower vents closed it's pretty difficult to get the temp up that high. You should still be ok however.
that sounds great Toby. We would just like it if you came out and let us feed you and your family, and have a good time. That's what it's all about anyway.
You folks be very careful out there for those who are in the path of this hurricane. We'll keep all of you in our prayers so that you come out of this thing unscaved.
I got room out front and Larry and I only live 9 miles apart. There will always be room for anyone that wants to "Q" and empty some beer cans or bottles. Gotta warn ya though, Larry and I are cheap drunks. We both got hooked on the new MGD Light 64. Very light and goes down much too smoothly.
Sorry gang for taking so long to acknowledge your comments, but I just got back from Bakersfield.
We definitely enjoyed the ribs, and our guest was amazed at the WSM powered by the DIGIQ II. He managed to finish off the ribs with no problem. i had sliced some gala apples and topped them with...
We had some pretty good ribs last night for our guest from Seattle who was born and raised in Chile and never had any ribs before. See the pics.pics
You will need to scroll down a little bit when you get to the page.
Now that is a scary thought. Makes what I already have that much better. I just got my WSM last year, and although I would love to have the newer model, I can't see taking out a second on my house just to have one.

Robert,
Welcome to the board! Just fyi, this should probably go in the WSM Mods forum. Looks like a cool mod and thanks for sharing...
Man that would have made me one angry old man. Good thing Weber has a great customer service department to replace that mess that you got.
Timing wasn't too good either it sounds like.
