Well, I guess it is Labor Day

    Congratulations!!

what are you cooking for labor day weekend ?

I cooked three times (different days) for 11 people this past week: one butt, 10 pounds of grilled chicken, and 10 t-bone steaks. So I will be eating leftovers on Labor Day, no cooking for me. My next cook will be ribs; my 7-year-old grandson said he wanted to try "ribs that are all hooked...

Favorite "not so usual" pizza topping

I stick to the basics: pepperoni, mushrooms, Italian sausage, green (or red or yellow) peppers, and onions, in various combinations. And mozzarella cheese.

    A few steaks

Nearly all were medium-rare to medium, with a couple leaning toward medium-well. I didn't have time to cook to order. Everyone got their choice and I left it to the parents to choose the more cooked ones for the small children.

    A few steaks

Tonight's menu for the family (children and grandchildren are visiting) was steak, baked potatoes, salad, and squash. I had never cooked 10 steaks at once, but it proved the fact that having two kettles can make a difficult task more manageable. Nobody had to wait for their steak while watching...

Convert a 22 inch kettle to a drink cooler..

One other potential consideration: weight. During cooking most of the volume of the kettle is full of air. Will the legs, and more importantly (in my opinion, without doing any math) the leg sockets support a full load of ice and drinks?

One thing a Tar Heel and a State grad can agree on!

I didn't get a picture when I took it off the smoker because it was wrapped in foil. I rested it for about 90 minutes and people were making sandwiches as fast as I could pull it. It was very good, tender throughout, pulled easily. I mixed the drippings and some eastern NC style sauce in, and...

Ten to twelve hour butt help.

I cooked a butt, somewhere around 8 lbs, today at 275, wrapped it at 165 (the first time I've ever wrapped a butt), and took it off at 201 degrees. It took right at 9 hours. It's still resting so I can't say how easy it will pull or how good it will taste. But I definitely saved time over my...

    Favorite breakfast sausage?

My wife likes Neese's so that's what we get. I have a feeling that, left to my own devices, I would find something better. Ideally I would make my own, experimenting with the spice blend until I got it just right, but I don't really have the equipment or kitchen space to make that work.

I bought the second kettle so I could grill chicken wings fast enough to feed that horde of locusts my wife's family when they visited. I only wish wings were that cheap again.

A pork butt is cooking away on the WSM. The two kettles are standing by as Plan B, ready to grill chicken thighs if the butt isn't ready on time (in which case we'll have pulled pork tomorrow). Both my children and all 5 of my grandchildren are here for the first time since the covid mess began...

If You Could Only Have One Weber?

Probably a Performer, something I don't have now. If my two kettles and WSM suddenly disappeared I'd buy a Performer. But I'd probably buy another WSM within a month or two. (Yes, I know it said only one, but I hereby invoke the Kobayashi Maru rule.)

    "Manager's Special"

Yes, this was Food Lion. I picked up a couple of butts on sale for 99 cents/lb a while back, and I always go by the meat department just in case. With the current trend in prices I'm sure a lot of people are doing the same thing.

    Kitchen Hack - what’s yours?

One can never have too many binder clips or carabiners. My hack: when I make bbq rubs I put a label on the jar/shaker with the recipe so that when it runs out I can make a new batch without having to hunt down the recipe.

    "Manager's Special"

aka "Watch the sell-by date". I bought and cooked a brisket last week, and I noticed that the sell-by date was 8/23, so on 8/23 I stopped by to check and, sure enough, they had been reduced by about $2 a pound so I bought another one and put it in the freezer. Today I was in the store again, so...

    Best dishwasher under $1,000.00

We bought a Bosch dishwasher less than a year before we moved, and I was tempted to take it with us. It was the quietest dishwasher I ever saw; I thought the little light that shone on the floor to let you know it was running was a gimmick, but you really couldn't tell it was on if you were more...
