    Simple here too. Prime ribeye steak from Costco with vegetables and a salad. Broccoli and cauliflower for the vegetables. On the salad, I started making my own dressing. Tonight was honey mustard. Not cheaper than buying it pre made, but better ingredients. Objective met - I’m full :D

    Agree. Nothing I see will affect the functionality of that WSM. Just keep it coated so it doesn’t rust. It will last a good long time. And, who knows, maybe you will come across a lid some day.

    Why would it need to rest for a long time? I’m thinking that I wouldn’t take it out until it’s done. That’s why I want to separate the veggies from the meat. That way I can focus on each and get them done properly. Not a big deal, just getting my game plan on for Friday.

    Will alcohol boil off during a cook?

    I’m going to do a Dutch oven corned beef. I want to use Guinness beer, but I have a kidney disease and I’m not supposed to have alcohol. Will the alcohol boil off during the cook? FWIW, alcohol will not drastically impact me, but the drs recommended I don’t drink.
