Time to replace charcoal grill and opinions wanted.

David, Going to agree with most here and highly recommend the Performer. I have the Performer with the ignition. I like others put the chimney on top of the lighter and burn it for 3-5 minutes then cut if off. Just as easy as a normal chimney start but no paper to deal with. This way you can...

    Cast Iron Skillet

I got a couple new lodge pans for Christmas. I decided to put a little more seasoning on them before using. The Weber cast iron insert has 8 coats. The 2 lodge pans are at 6. At 8 you get that nice black shine.

    The All Encompassing Beer Thread

Just had my first goose island a couple weeks back, winter warmer I believe, and it was excellent. Hope it stays that way for the long run. AB's other partially owned craft brews (widmer, redhook, kona) aren't exactly my favorite.

Cooks from the past couple months

Thanks Everyone. Ray, you aren't kidding. $2.29 / lb on 2x 80 lb cases down in south florida at rest depot. Was $1.89 last year. But their pork and beef was pretty cheap down there.

Cooks from the past couple months

Been cooking a lot lately, just haven't had time to posting anything. So here's a compilation, in no particular order. Cooked 10 butts for a local church and my own freezer. 35 lbs for the church Herb rubbed pork loin, half sliced thick for dinners the other a little thinner for sandwiches...

    What to do with ashes?

I dump mine into a large metal trashcan. I save my old empty charcoal bags. Every few weeks, after I haven't dumped anything into the trash can in awhile, I take my charcoal scoop (metal ice scoop, $9 @ RD) and fill up the bags and put them out for the trash. I also dump grease and used foil in...

Packaging pre trimmed meat for a competition.

I have trimmed at home and just used gallon zip locks. Chicken is the most time consuming so I always try to do it at home. I also keep the original label and throw it in the zip lock. I know in FBA they can ask for it, KCBS does not. However, I'd rather have it and not need it. Being under ice...

    Chicken wings...for 30 people?

Mary, Pieces or party wings already cut into flats & drums. Your pcs / lb will vary greatly depending on the size of your wings. If you buy them at a place like rest depot it will give you a range per case.

It sure has been awhile, questions about a party for 60

I have done several large butt cooks in the past couple months with pre cook weights of 100 lbs, 75 lbs, 48, and 83lbs. Every single one was right at 50% yield from the precooked weight. The 83 lb cook was exactly 50% down to the ounce. I do not trim any fat prior to cooking, but we do remove...

    Smoke wood

I buy all of my wood chunks from a local guy in Atlanta. He cuts his wood down at the right moisture content and it makes a huge difference. First time I bought a box and compared a chunk to something I got at the store, I was shocked at the difference in weight. He also ships...

    Chicken wings...for 30 people?

With the price of wings you might be better ordering them as Mike suggests. If I buy 40 lbs (250-300 wings) of wings at Rest Depot they are $1.99/lb. We did an event last year where we were given wings to cook for people at the event. We cooked 800 wings on 2x 22", 1x 18" and a 26" OTG. We did...

New Performer, Rotisserie and Food Saver V3880

Mac, I haven't changed out anything out on a my performer. I did add a probe grommet later, but that can be done after assembly if it was something you wanted. Get to assembly and cooking asap! I hit 10 years last December and my vacation time didn't even go up!

    Charcoal bins

I bought one of the kingsford tubs and just place the bag in there, I don't empty the bag into it. Much easier to grab a bag out of it and pour. It keeps the bag & charcoal dry. I use a galv trash can, probably 35-40 gallon, to dump hot ash & spent charcoal in. I have noticed that water (small...

How many briskets on 22" WSM? Need to cook 100#

For packers I only see 1 per rack. I can't remember the original spacing between the top & bottom rack on the 22" (I dropped my lower rack and added a 3rd rack) but you could possibly put some sort of support on your bottom rack, put the 1st packer on the lower, then put an extra rack on top of...

    Weber Performer

If I could only have one grill/smoker, it would be a performer. I have only cooked ribs on a performer once, and that was a couple weeks ago. I don't cook baby backs often (only a handful of times in my life, I cook spares) but a friend picked up a few racks of baby backs. Rubbed them and put...

    Bark on wood?

It is about impossible to purchase fruit woods without bark. The majority of fruit trees won't get as large as hardwoods so whoever is selling it will use every bit they can. The larger branches and trunk are usually sold in split form. The smaller chunks are the smaller branches so you will...

    Cleaning up

After a cook I remove the middle section (watch out for spilling grease) and place the grates on top of the charcoal ring. I let it burn for about 5-10 minutes then shut the bottom vents and place the middle section & lid back on, with the top vent close. Once the smoker is cool, hit the grates...
