Been cooking a lot lately, just haven't had time to posting anything. So here's a compilation, in no particular order.

Cooked 10 butts for a local church and my own freezer.

Herb rubbed pork loin, half sliced thick for dinners the other a little thinner for sandwiches

Grilled it up, topped with ancho aioli, served with roasted taters, and asparagus topped with a poached egg

On the grill, prefer parchment but foil works. Didn't get finished shots.

Every New Years I head down to a friends in south Florida and we end up throwing a big party for New Years Day bowl games. Well this year it got up to 130 people so I brought the big smoker down with me. We did 8 butts, 26 racks of ribs, and 300 wings. Plus sides of mac & cheese, baked beans, and coleslaw.

Here is the 8 butts on an 14 racks of ribs. Don't mind the gnome... long story.

Moved the 14 racks up to the top, put 12 more on the bottom and a perf sheet pan full of 150 wings getting a nice little smoke.

No wonder the price of wings are going up. ;) Great looking cooks. I need to try and sell the wife on a smoker like that.

Ray, you aren't kidding. $2.29 / lb on 2x 80 lb cases down in south florida at rest depot. Was $1.89 last year.

But their pork and beef was pretty cheap down there.
