    looks good to me! I've made tacos out of plates w/those ingredients(potatoes, beans, egg and cheese). mix em up, toss on a tortilla and add hot sauce...great food anytime.

    based on that, i'd say that the butt temps aren't rising because they're essentially insulating each other. meaning i'm guessing the air is not flowing around/between them enough to heat them fast enough.

    are you using both of your WSMs? I see you have two in your sig. based on the temps you're posting, i'm guessing you have a serious air flow issue. sounds like your coals are snuffing out before being fully consumed. even w/just the 22.5 for those butts, no way you should be adding that much...

    thanks all! very happy w/Buddy. took a lift or three to remind myself that the lid holder was there. after that, not sure how I lived w/o it. thermo worked great. even though it was pricey to purchase and convert, i'm glad I did it. I've got a great cooker that is also, imo, unique.

    I used to use paper in my chimney. then I discovered the weber cubes. no looking back. light easy, burn hot/long, no odor and can be crumbled by hand when needed.
