    cost and taste of spares vs. st louis cut

    Based on the way my wife vs I eat wings, I took spares tonight and trimmed them up St. Louis style. I'll use some of the trimmings in the beans, but the rest of the cartilage filled bits will be my afternoon snack :D I'm totally ok with that, and can't wait until tomorrow.

    I'm doing spareribs tomorrow, and trimmed the cryovac to st. louis style. The 3 racks rolled will (hopefully) fit on the top rack of the wsm, and my beans will go on the bottom. I want to put some of the scraps in the beans, but I'm not sure if I should put them in raw, or smoke them first...

    The purple ones turn green when cooked, so they are best raw. I had never had the copper colored ones before.
