    carbon (not stainless) steel cutlery

Thank you both. I may be getting K Sabatier Chef's knife soon. I am curious to see how it will compare with similarly priced Henckels stainless. (I think it was the "four star").

What is everybody using to insulate thier WSM's?

I bought a welding blanket that was 4x6 feet and tied the two corner grommets on the long axis. It slid over the top of my 22.5 very easilyand had a triangular opening through which my thermometer cables passed. The bottom of the triangle exposed about a foot of the joint between firepit and...

    soundbars

I have a big 5.1 system in my man cave in the finished third floor. I want to upgrade the main floor living room tv. My far better half does not want all of the speakers and paraphernalia to come downstairs. Have any of you used a yamaha yas 203?

    Grill Reccomendation

Got a deluxe last spring. I absolutely love it. The metal side table is a nice step up as is the gourmet system. Seasoned a new carbon steel wok recently. It got plenty hot. I still use a chimney to get the coals started before transferring them to baskets, but gas assist is really sweet...

    carbon (not stainless) steel cutlery

I recently seasoned a new wok over a charcoal fire with my son. He is 11, and immediately by my side whenever I am cooking outside. Anyway, the conversation is always interesting, and that day's subject was metallurgy. I am aware they are a little more maintenance, but I am thinking of...

    WSM 22 max temp issues

Try putting something between lid and top of wsm to increase draft. Just a 1/4 inch crack on one side of smoker will really stoke the coals, so keep an eye for awhile! Oh yeah, and how many lit coals did you start with? I was able to get over 375 at T' giving with a full chimney of lit and the...

Smoking ribs on 22 WSM for first time. Cold. Advice

We had 40 degrees in the blue ridge the other day, but worse than that, it was breezy with intermittent gusts. I saw some posts here, where some of you used welding blankets wrapped around the wsm. I stopped by Harbor Freight, and they had a 4x6 foot blanket rated to 1000 degrees. I tied the...

Why do we wait for lit charcoal ash to "gray over" before using it?

I think it has to do with combustion of cold vs warm fuel. I do like Rich, and dump chimney when the visible smoke stops, even though top might not be completely grey. When I dump onto a cold pile of briqs (as in minion), the smoke reappears for awhile, then fades again as the fuel warms up...

    smoking cheese

Eric and Jerome- Thank you for the links. I have everything in Eric's post, and I think the 14 year old might enjoy using the torch (with supervision of course). I hope you both had a great T'giving!

    smoking cheese

I have a wsm 22 and performer deluxe along with a maverick 732. My kid has expressed an interest in smoking cheese. Can anyone recommend some basic references about this or share some of your experiences. Is it possible to do a cold smoke on the performer?

    fit?

Thank you, gentlemen. I should have known the information was already here. I hope you have a great holiday! I have only done a self basting breast on my performer once and it turned out okay. My brother is bringing a pre-brined bird from whole foods. I don't want to mess up. Wish me luck!

    performer lid bail modification

Thanks, Charlie. I have never used those baskets, but I looked at them in the store. they don't look as though they hold a lot of fuel. how often do you have to refill them during a long cook? I will try the extra washer idea also. I am eating my heart out- I have had it for a few days, but...

    Share your hot charcoal photos

Timothy and Rolf- Thanks for the tip. I have had a WSM for a little over a year now, and I am getting my first kettle grill when I get home from work tomorrow. I don't want to damage it from misuse. I am also trying to figure out how to avoid damage to the plastic rollers on the lid bale. I...
