smoking cheese

I have a wsm 22 and performer deluxe along with a maverick 732. My kid has expressed an interest in smoking cheese. Can anyone recommend some basic references about this or share some of your experiences. Is it possible to do a cold smoke on the performer?

Eric and Jerome- Thank you for the links. I have everything in Eric's post, and I think the 14 year old might enjoy using the torch (with supervision of course). I hope you both had a great T'giving!
