    I took off as much fat as I could from the turkey before I cooked it and added it and a little cooking oil to a CI skillet and rendered thew fat down. Used the neck, tail, and giblets, celery, and onion to make a stock. Used the fat a little flour and the stock to make my gravy.

    IMO carnitas aren't carnitas unless they are braised in lard and that takes quite a while. Some other Mexican pork styles are pork adobada, pork avodada, al pastor, salsa verde pork and Chicharron are a few styles that I can think of off the top of my head.
