    First Start-Up on New WSM 22.5 Was So Easy!!

    The reason I don't use water in the pan is because I don't want to clean up the mess. It takes <5 minutes to foil the pan and <30 seconds to clean it.

    Fuel consumption on the WSM 22.5

    22" WSM. Using 15 lbs of KBB I get 15+ hours running at 225. Dry foiled water pan, minion center method. 10 briquettes or so is plenty to get the fire going. Holds temp after the first three hours like it has a thermostat on it.

    For Christmas a year ago my sister-in-law gifted me an assortment of smoke woods. There were several fruit woods including peach and apricot. The apricot smoke is very similar to peach smoke. I really like it. If you can store the wood where it will not get rained on you will have a real treasure.

    Does oak taste like ash tray, or did I just get some bad wood?

    I put lots of wood (oak included) in the cooker spread across the top of the coal bed. Everyone has to find their own flavor profile, my family likes the stronger smoke flavor.

    My First Shot at Brisket

    I agree with the others, nicely done. FWIW I have never achieved much of a smoke ring and it used to drive me crazy. After trying just about every trick short of MSG I quit worrying about it. Tenderness, moistness, and favor is all I care about now.
