    Cleaning Out Ash: A Must?

    I empty out every couple of cooks or before doing a long cook. I took a one gallon Wesson Oil plastic bottle and cut the bottom off it and use it as a scoop to get most of the ash out. The left over I don't worry about. Not too moist here, so I don't think I'll have any problem with corrosion.

    Dan, I have heard of people using the 18.5 ring in the 22.5 to save coal. I guess it makes sense, but when I close my vents, my WSM shuts down to the point that I can put my bare hand anywhere on the outside within about an hour.

    You've got this. It's just like cooking one butt, but it will take a little longer on each phase of the project. More butts to rub, more meat to heat, more meat to pull. But, it's still just BBQing butts... ;)

    Clark is right. It is not mandatory unless you are having temp control issues. Sounds like your barrel or door may be a little out of round. Do multiple measurements across the barrel's top and bottom to check. If it isn't fairly even all the way around, give it a little hug to round it...

    I have heard that the gaskets and door are not needed, but I had to tinker and did it any ways. BBQGaskets.com and Cajun Bandit for the door. You can see my mods (including the gasket install) HERE.
