First Time using Slow 'N Sear Need some help.

this is strictly my opinion but- in my cooking experimentation with the sns smoking (and banking coals on one side of the kettle for that matter) I think it produces some wildly uneven temps inside the kettle and food needs rotated. I also found that indirect baking potatoes with the sns did not...

First Time using Slow 'N Sear Need some help.

I dont use water in the sns, and I dont really use it for smoking anymore either. I went back to the weber charcoal baskets and place one on each side and halfway fill with unlit coal and pour the other half of lit on top with smoke wood. I put the meat between them with a drip pan below...

Cleaning and care of cooking grates and water pan

I ditched water in the pan over a decade ago, the easy off stuff works good on the cooking grate... there is some other stuff the pit barrel users use to clean out their smoker that looks to strip the inside of most grease etc...have not tried it, I usually do a "burnout" of the inside by...

    Turning a Black 2012 Performer.

I sold my (2005?) performer pre-pandemic for 150, garage kept so it was in great condition...I had lots of offers of $50-100, no way... I could have sold it for 200 because the guy had been shopping for a new one and I believe they were selling new just over 400 at the time so he was excited to...

    Starter Cubes

my preferred method today is weber cubes under the chimney, Ive also used paper/junk mail- propane torch with the chimney ....I dont think you will get a fire going trying to light a coal without a torch or some other fuel

    Kettle Inflation???

yeah things are not going to get better any time soon and I cant see these prices coming back down even if inflation gets back under control. I say if you are in need of something get it now , I dont think this mess has peaked yet and no telling what new prices companies will roll out next year
