    Marinade and rub question

Hi all, I'm wondering what the best method is. Do you recommend to marinade and rub or just marinade or just rub. I would be interested to know if it makes a difference? Would it be over kill to do both? Thanks for you help on this.

    Table for smoker and grill

Hi All, I was wondering if any of you have seen or know anyone who has built either a wood or stainless steel outdoor table with wheels to drop in a Weber smokey mountain and a normal kettle grill. It would be nice to have both of them integrated into one table that you can just roll out an in...

Hey Jeff, I know what you mean but that's the best part! :-) From your pictures, it looks like the skin is pretty crispy with a low and slow method?

Maverick ET-733 Shops in San Francisco???

That's exactly what I was thinking as well.... I called Maverick directly on Friday afternoon and asked then to provide me a list of authorized maverick dealers in San Fran and also the Vancouver area. They said they don't have any authorized dealers there???? I found that hard to believe so I...

WSM 18.5 water pan. To fill or not to fill. That is the question!

Hi All, Thanks for all the great advice so far! I've went out and bought the Weber chicken holder https://store.weber.com/accessories/category/cook/cookware/1242 so I think I will use this on the top rack with a pit smoker setup (no water pan, chicken on top rack) Looking forward to the...

WSM 18.5 water pan. To fill or not to fill. That is the question!

Thanks Dave, I know I could do it on the performer but I really want to test out my new WSM :-) I guess I could try no water in the pan then? Or did you mean no pan at all in the smoker.

Maverick ET-733 Shops in San Francisco???

I was thinking of that as well but I guess I would have to order it closer to the day of flying as we are staying in a hotel.

WSM 18.5 water pan. To fill or not to fill. That is the question!

Hi All, I wanted to get some expert advice since I am very new to this smoking thing. I understand the purpose of the water pan in the smoker is to help regulate lower temps when filled with water so I assume if I don't fill it up with water at all, and add the recommended amount of fuel, it...

Should I get a WSM??? HELP!! I can't make up my mind

Gary, thanks for the info. I just checked the dimensions on the rack and they are 16.5 x 4.5 x 10.5 inches so i guess that would leave me 1/2" of space on each each if the diameter is 17.5"

Should I get a WSM??? HELP!! I can't make up my mind

Thanks for the reply. My problem is not how many racks of ribs to fit on my rib rack but more of will the specific rib rack that i have and use on my 22.5 performer, fit on an 18.5 WSM.

Should I get a WSM??? HELP!! I can't make up my mind

Hi All, I am tending more towards an 18.5" WSM as I think I wont be doing a lot of cooks for large groups all the time. I will probably be doing more for the family 6-8 people maybe 1-2 times a month. One quick question to you all before I hit the "buy" button. Does anyone have a "Weber...

How to maintain 250-275 with Weber Kettle?

Andrew, I have the exact opposite problem you have. I can keep a low temp without any problems, but I have an awful time trying to get it smoking hot for doing pizzas, or searing meats. I can barely get above 445 with a full lit chimney.
