    This ^^^.......and your family will love them. To prevent dryness “mop” them about 30 minutes in with a generous mixture of olive oil and your favorite rub. You want to check them about every half hr afterwards, and mop again if the surface appears dry. Repeat until you foil.

    Kyle - I saw that beautiful grill and didn’t realize it was yours. Came this close —> (fingers close together) to inquiring about it - several times - and regained my composure. Now knowing it’s yours I’ll refrain from insulting you with the lowball offer I was going to send.;)

    Important note - the WSM is the 18.5 inch size, not 22.

    I think that was a large part (if not all) of your temp problem. The width of the 22s water pan acted as both a thermal barrier and airflow restrictor, both of which have a direct impact on temps. In the future use NO water pan, keep everything else the same, and you’ll reach the temps you want.

    Replacement bottom grate options for older 18.5” WSM?

    You *can* use a charcoal grate for the 22.5" kettle, as they are ultra cheap ($10.99) and readily available at Home Depot, Lowe's, etc. I would clean and season thoroughly before use because the metal isn't ready to cook on as is.
