    Good torch for starting?

I use a mapp torch too Rich, and I love it. I am really surprised how long a tank of gas lasts too, I bought a replacement because I thought I was getting low. That was last summer, and it gets used as a cigarette lighter too when I misplace mine.

    Smoking a pork loin?

He will be seriously disappointed if he cooks that pork loin to 190. Show him this thread if you need help stopping him You can sear at the beginning or the end either way is good in my opinion, as long as you take it off when it is still good and juicy. I also pull pork loins around 145...

    Chicken Drummies!

Thanks for all of the compliments guys! Just wondering if any of you have any tips on getting that skin as crispy as possible? The skin was only about half as crispy as I would have liked it to be, it wasn't slimy or inedible but I still would like it to get a little more crispy. I really...

    Chicken Drummies!

This is what I did instead of going to work on Sunday. I've grown to love me some chicken drummies, they are cheap and delicious I have only done them a handful of times so I'm still experimenting but they turned out really well. I used McCormics Grill Mates Marinade dry mix (the kind you...

1 big piece of meat vs 2 smaller pieces.

Its all about the overnighter for me, its all part of the experience. The only thing I've cut in half is a chuck roll, and that is more for easy handling as a full chuck roll is 20lbs plus. I like doing large quantities so that I can foodsaver and freeze a bunch for later. I love having a few...

My First try at HH Brisket--Video

Thanks for the video Bill! The brisket looked like it came out really well for you despite your temp questions. I'm getting really jealous of all the people cooking in warm weather though!

Finally starting to warm up, RIBS

Well its been a long cold winter in Iowa. Cold weather hasn't held me back in previous years but I've had a bad case of the blahs I guess. I finally got off my duff and did some ribs Saturday. Nothing exotic for a rub since my cupboards are pretty bare spice wise, I used some famous daves rib...

Not making this up I swear.

Joel, you got that right...theres nothing like walking outside in your pajamas into a nice refreshing Iowa morning, aka -15. It may get colder some places, but we rank right up there. It builds character right I have a bunch of before pictures and plan to take some afters sometime today...

Not making this up I swear.

I just woke up to the guru ringing in my ears, low temp. After stumbling around in the -15 degree cold, trying to figure out what happened, I realized that the guru was flashing as if it were trying to run the fan. I reached under the guru fan to the opening and spun it by hand a few times and...

    Real BBQ smokies

awww man, Bryan, thats what they were missing was some pineapple! Still they beat the heck out of dumping some store bought bbq sauce in the crock with precooked weiners...so anticlimactic. There wasnt much to see picture wise so I didnt bother.

    Real BBQ smokies

Ok, got them all loaded up in the crock pot, its going to be a good day for snacking. If I were to change anything, I'd have gotten smokies without cheese in the middle, but the grocery store was wiped out and thats all they had. Some of the cheese leaked out and burned....oh what am I saying...

    Real BBQ smokies

They just went on the smoker. Three packs didnt fit in one layer on the pizza pan I used to keep them from falling through the grates, so I'll have to do some stirring/rotating. Bob, your recipe is a little different, sounds like your going for a crisper version without adding to sauce at the...

    Real BBQ smokies

After having mediocre smokies a few times this holiday season I got to thinking... The plan for the day is to try some "real" bbq smokies. I bought 3 packages of lil smokies, going to put them on for an hour or so at 225. I got some Jack Daniels wood chips for christmas that will be used for...
