    HM4.0 vs 4.1?

"Soon" is relative ;). Another member has all the parts here for a 4.1 but this thread has me worried. I could get it all w/in a week and have it up and running, which is compelling. Re: the K-type thermocouple, what's the benefit? I tried to find info in this forum but my search-foo isn't...

    HM4.0 vs 4.1?

I am looking to build a HM, and I was going to go the HM4.0 route because it looked like there are some issues with the probes with 4.1. So...which build is more solid/has a lower default rate right now, 4.0 or 4.1?

    I replied to your thread.

    Better probes?

It's an interesting problem to solve. Is the ADC returning obviously spurious results or are they too sneaky to filter out? I.e. would it be possible to make assumptions for the direction of the trend and ignore values coming from the ADC that are "obviously wrong?" Also, I've never written...

    why are ribs deceptive ?

On this note, I like my ribs KC style. I finished them on the grill, with a light mop of sauce to caramelize. Oh boy good. Do any of you prefer to hold off on the wet stuff just for long term storage and reuse in different recipes? I'm thinking that I'm locked in to ribs as-is until I've eaten...

    why are ribs deceptive ?

Glad to hear this thread; I took my first stab at ribs on my new WSM and could have made half as many slabs and still had leftovers.

    Better probes?

Agreed. I had hoped (and assumed) you had already thought of this. You also mentioned that you don't have cycles to move data around and issues w/ floating point. I'm guessing that eliminates mode averages since you'd need to round to a less-accurate number then (possibly) sort, then find the...

    Seasoning the WSM

Hey Dave, I had the same reaction. I read everywhere that there's no worry and the worst thing on the WSM was cardboard flakes, but my hands were a mess (not black, but definitely "funky") after putting it all together. That seals it; I'm going to run it high and hot tonight and get a good slow...

Not Sure What To Buy 18.5 or 22.5

If you like to host events (I do), I would strongly suggest the 22.5. I was lucky enough to be able to see both the 18 and 22.5 next to each other before buying. Yes, the 22.5 is big, but if you were to stand up my grill on it's end, they'd be about the same size. I also plan on running ribs and...

    Better probes?

Bryan, just out of curiosity, what kind of average algorithm did you write? Was it a simple mean (or median or mode)?

    Seasoning the WSM

Hi Andy, I'm like you; just took the wrapper off my 22.5 on Monday and haven't had a good 3-4 hour window to burn-in. The more I think about a dry run, I agree, it seems wasteful with the ONLY exception being that I need to make sure to understand how to control the temp. If I have time after...

Moist/Dry Feature on Foodsaver Vacuum Sealers

I recently bought one with the "moist" feature and agree with Darren that it's pretty easy to tell when to stop by just watching. IIRC, there is a special bag for "wetter" items that looks to be a good idea. I haven't used it so I'm not sure if it's worth the extra storage or not. It's one with...
