    My drying Fridge

I wonder if thermal mass has something to do with it. I doubt the wine fridge is designed to run empty for long periods of time. A bunch of bottles of wine will have a lot more thermal mass require a lot more thermal energy to cause changes in temp that will trip the thermostat.

    Beer Can Chicken

Made some beer can chicken this weekend. In the recipe in the cooking section there's a comment "most of the steam goes right out through the neck cavity". To try and mitigate this, I've taken to stuffing part of a lemon in the neck cavity. I don't know if it actually does anything, but the...

    Need a new grill

Wow! I love the Weber. Not only is it better built than my Kenmore, but it cooks better too. It definitely gets hotter. I like the stainless grates too. I had cast ironon the Kenmore and thought I'd miss them, but the Weber sears just as well and seems easier to keep clean - no sticking so far...

    Huli Huli Chicken

In case you've been waiting a couple years for a replye, here it is! I WSM'd this recipe tonight. I didn't really need to change anything. I used full sodium soy in brine so that I'd be sure that the chicken didn't dry out. I brined for about 6 or 7 hours. After removing from the brine, I...

    Need a new grill

Forgot to say that it seems that the reliability of the Weber will likely be WAY better than the Charbroil.

    Need a new grill

I'm starting to think you all think I should get a Weber. The Charbroil seems innovative, but I think I'll go with a Genesis (even though I want a Summit). I'd go with a Performer, but then it occured to me that lighting charcoal in the rain (it rains a LOT here in western WA) would probably...

    Need a new grill

Turns out that annual maintenance in a gasser is important. After 7 years, my nice Kenmore is all rotted out on the inside. At least $620 in parts to repair it. Actually I'm not sure if it was the heat or the lack of interior cleaning that did it in. All the metal is flaking apart. Anyway...

    Where to start with mods?

Eyelets is a good start. I'd consider a side table too. Gives you somewhere to set the Maverick that you'll use with your new eyelets.

    Espresso machine

A good place to go for info on various machines is http://www.seattlecoffeegear.com/. That said... I have to confess that I wussed out and bought a Nespresso instead of a Rancillio. The wife would never have used the Rancillio.

    Bacon - too salty!

Thanks guys. Good advice. I'll try soaking it to see if I can salvage it. AFTER I try a piece from the middle. I'd expected the ends to be salty, but not THIS salty.

    Bacon - too salty!

Hey folks, I'd appreciate some help debugging my first attmept at bacon. Here's what I did... 1) bought a small pork belly at local butcher shop 2) mixed up a simple cure (kosher salt, pink salt, sugar) based on the Charcuterie book. 3) measured out some of the cure (can't remember how much -...

    Pork Cracklins

Thanks guys! I wasn't necessarily planning to do them on the weber, but was just looking for advice/instruction in general.

    Pork Cracklins

I've been inspired by this forum to try my hand at bacon, so I got myself a pork belly. The butcher offered to slice off the skin for me so I took him up on it. Then he asked if I wanted the skin to make cracklins. Sure I said thinking that there would be a recipe in the Charcuterie book...

First WSM this weekend. How to arrange?

Hi Bryan! I can't really help you with arrangement as I've never smoked that much at one time before. I'd guess that it would probably all fit the best with the brisket on the lower rack, and the butt and ribs on the top rack. As for removing the top grate, the tool I use is my wife. If...
