    Your favorite store bought Holiday ale?

    I would highly suggest Corsendonk Christmas Ale, Scaldis Noel Belgian Ale, Beckenridge Christmas Ale, St Bernardus Christmas Ale and Affligem Noel Christmas Ale. Really like the Belgian Abbey Ales - pricey - but IMO well worth it.

    Rita: I initially purchased 3 for my Genesis. Worked great. Ended up purchasing 2 more for complete coverage. I invert the last 2 so I have a flat surface rather than grill marks. Love them for creating a crust or toasting rolls. They tend to run very hot so toasting is quick! No problem...

    Hog casings

    I use casings from Syracuse Casing. They are pricier than most but the quality excels also they are a product of North America. Can be purchased hanked or tubed, salt packed or preflushed for the same price. Also their sheep casings from New Zealand are great for hot dogs and snack sticks.

    Meat grinders ?

    I have used the same unit as Martin for about 6 years. Have ground a lot of venison though it with no mechanical problems. I would recommend a dedicated sausage stuffer rather than using the stuffing attachment on the grinder.

    Hi Dan Put some baking soda in your coffee grinder and pulse it than let it sit for a day or so. Spice smell should be gone

    Your right on the money. Pat them dry and repack in salt (non-iodized) and refrigerate and they will be good for up to a year.

    Best source for All Clad cookware?

    Chris - You may want to look at cookwarenmore.com. They sell All Clad irregulars for a substantial price cut. The ones I have purchased from them usually have a small surface blemish which you really have to seach for and I have not experienced any negetive impact in their performance.
