After some advice. I've got a fairly new Weber smoker. I've cooked 4/5 really succesful cooks (baby back ribs) so I'm ok with the general prinicples.
However cooking a few more sets of baby backs this time. (5 hours for cooking and in my house, 5 mins and they are gone...

Tomorrow is PB-day. Cant wait to enjoy the process and food at the end. So i'm going to use the snake method with waterbath following the Renowned Mr.Brown recipe.
Question I have is, to foil or not to foil ?
Or should I only foil if I'm struggling to get the IT to 190/205 ?
