    I am hosting a party of 25 people. 11 are men and 14 are women. I am planning on smoking at least two butts and some racks of ribs. I am not sure how many butts I should smoke. Two for sure. We will have other fixins too. Any thoughts on how much a 15 lb butt will feed? Thank you!

    As long as you properly cleaned it with soap and hot water; you are probably okay. Just make sure you keep the bird submurged with plently of ice.

    To Rub or Not To Rub.........

    I make my own rub and use it always. The rub usually compliments the flavor of the meat. In my opinion, sauce hides the flavor, but this is a personal preference. How much is too much? After a few smokes under your belt, you'll know.
