Hope everyone had a good holiday and was able to spend some quality time with family and friends. We had been out of town and just got back Tuesday without a real game plan for Wednesday dinner - We stopped at the store on the way from the airport and audiblized at the line - this is what we did:
We grabbed a slab o' beef, some herbs & garlic, a sack of spuds and green beans.
Made a paste of the garlic,the herbs, some salt, pepper, onion and some olive oil and rubbed it down.....

Threw it on for a couple of hours until it reached 127 - The obligatory 'action shot'......

Carved it up...

Plated with au gratin spuds and Green beans. We made Julia's horseradish sauce for the meat...The spud recipe is also from the Julia Child 'Way to Cook' book. I like that one -
