In case y'all haven't seen enough turkey yet today!

20 lb, fresh young Foster Farms turkey (CostCo)
Brined for 12 hours in the basic brine from TVWB
275 degrees, no water in pan
Cherry and peach wood
4.5 hours

Perfectly moist, the right hint of smoke, and the drippings cranked the giblet gravy up a couple of notches.
