Got a couple of these at Costco…did a marinade to start it off. Then did a rub and added some of the salt I smoked recently with hickory and peachDid this around 300 then cranked it up towards the end. Added some peach . Roasted some potatoes and did some special green beans. Pulled the rack off at about 143 and gave it a short rest. Sliced so smoothly…Cheers and Merry Christmas and the best of the holidays to all of you!
