WSM ROAD SIDE CHICKEN

got started talkin' 'bout this recipe again a few days ago.... then Ray brought up the double chimney charcoal version...
so.
here we go.

i know, all this for eight STINKIN' chunks o'chicken??!!

Marinated overnight in ROAD SIDE WONDERJUICE!

Basted RELIGIOUSLY every five minutes for 45 minutes...

alright! Shé~cone remove from the Magic Maker and these guys were sliced, oiled and tossed on....

those tomatillos weren't on very long, seems the heat was too intense...

i then removed the midsection (wish i could remove my own) of the WSM . . .

to char up the nopales a bit.

that worked perfectly.
Then, we diced up the cacti and the tomatillos and plopped on some shé~cone~side parts and ate like no tomorrow!

after dinner plates were washed and the WSM was cleaned and stored for tomorrow or Sunday's use,
i poured a little of that official p1gvilion bourbon and sat in front of an illegal fire.

**** I almost got some catus tonight but I didn't! Oh well later! Good looking chicken!! Burbon sounds wonderful and watch out for the fire police!!!

A little bourbon and a fire is a fine way to end the day.
