Great looking PSB Jim. Everytime I see that I keep telling myself, "Self you need to make that." But for some odd reason I havn't listened yet.

Great looking cook Jim, especially the corn, I prepare my like yours but I squeeze some fresh lime juice on it.

World class post but what is the idea of putting it in the oven instead of back on the WSM?

...then sent into the oven at 350ºF for about another hour..

this is an old post... geez...
umm Dennis, if I remember correctly, the coals were dying in the WSM and the meat took all the smoke it was gonna get any way... so I finished inside the awesome oven;)
