Your version of PSB looks fantastic. I haven't heard from Larry since he departed the Kettle Club but I imagine he'd be pleased his PSB has taken off here the way it has. Looks like he's been cookin up a storm over at the Wolfe Pit.

Hello Mr.Lampe,
Hoping you see this before I start, kinda decided to do this last minute. Preparing here for the blizzard tomorrow and I always smoke/grill something special when we have a big storm. Do you pretty much follow Larry's recipe or any changes? Also got a 5 lb chuck, should I trim any fat or go as is?
