Things are finally getting back to normal here, I always grill or smoke something special when we have a big storm. This is one smoke I will never forget, not only because of the end result but for the blizzard. I pretty much followed the recipe except for only 1 jalapeno, used red and green peppers, and Ipswich oatmeal stout instead of Guiness extra.
Snow has started, time to clean this off
5 lb chuck from BJ's
Rubbed up and ready to toss on the WSM
Ready to smoke, used 2 small hunks of Maple
Waiting for Chuckie
Ready to braise
Finished product
Served over cous cous that night but did the rest as sandwiches.
This was clean when I went to bed at around 1 am
30" later, snowdrifts up to 4'
